Visions by the Fire Barrel Aged Sour

"Back in 2018 we went for a trip up to Kaikoura to hang out with our friends from Emporium and Concept Brewing. After a day brewing we sat around the brazier long into the night opening one bottle after another of mixed ferment sour beer. We collected all the dregs from the bottles, grew that up as a culture and later inoculated a barrel filled with a pale base beer. After two years of barrel ageing we racked the beer onto peaches and plums and aged the beer fro another year before bottling. The result is dry, fruity, tart and lightly funky".
