This coffee was grown by Luis Aldana, Farm La Granja. La Granja has produced some incredible coffees, we are always eggar to get cupping!
This lot of San Bernardo was exposed to a 25 hour dry fermentation, before being placed in Grainpro bags for 50 hours at the temperature of below 22 °. The whole cherries were then placed on raised beds until moisture level of 11% was achieved.
San Bernardo is a varietal that's a natural mutation of Typica originated in Guatemala. It is very rare to come across this in Colombia. The yield is low, and the cup profile quite unique, complex with floral and spices and a medium body.
