Sauerkraut

 

New season's fermented green cabbage - Polish style. The only preservative is plain table salt, sprinkle of sugar and the natural cabbage juice created during the fermentation process. I add a little bit of carrot for extra nutritional value. This sauerkraut is not pasteurised so it still has all the live cultures in it. It can be stored unopened for months. Once opened, keep in the fridge for up to one month.
