Description
Curly parsley, is a leafy herb that grows fairly slowly, reaching approximately 30-40 cm high and wide. It is a biennial or short-lived herb. The plant forms a rosette of rich green stems with thickly ruffled, dark green triangular leaves of three leaflets that tightly curl at the divided tips. In its second year, the plant will produce umbels of tiny yellow-green flowers, followed by capsule of brown seeds. The leaves are tender and flavourful in the plant’s first year however will become bitter and coarse as the plant begins to flower and seed.
Uses
Culinary – Parsley is a low calorie, nutrient dense herb which is rich in vitamins K, A and C. It is also a good source of iron, folate, potassium, copper, and zinc. While traditionally used as a garnish, this powerhouse herb deserves more respect. The fresh leaves make a vitamin and mineral rich ingredient when added to green salads, pasta dishes or minced into devilled eggs. It also makes a great addition to potato salad or can be used to make a delicious pesto. Dried parsley also makes a nice seasoning for soups and sauces.
Medicinal – Parsley is rich in antioxidants which may help prevent cell damage and lower the risk of certain diseases. It beneficial to the digestive tract and is has traditionally been used for the treatment of urinary tract infections or kidney and bladder problems. It can also improve digestion, detoxify the body, or even cleanse the palate and freshen breach.
Growing conditions
Parsley prefers a moist and free draining soil that is rich in organic matter. It prefers a position in full sun or partial shade.
