Cumin Danbo "Clive Cumino"

Winner of the 2024 "NZ Specialist Cheesemakers Association Champion Aged Flavour Added Cheese" category, this Danbo, a Danish take on a Dutch Gouda, has subtle sweet floral notes which pair brilliantly with the savoury characteristics of the cumin seeds. Aged for a minimum of 3 months, using sheep milk from James and Kate Clairmonts' small sheep heard farmed in the Tuki Tuki Valley in Hawkes Bay, this is a delicious interpretation of the extremely popular Cumin Gouda.

A sweet quince, pear or apple paste will go nicely with the sweet and savoury flavours of the Clive Cumino.

Try a Gewurtztraminer or Riesling with this cheese to balance the fully flavoured cumin seeds.
