This mushroom has a wonderful delicate yet savoury flavour. It is not 'musty' like a button mushroom. The flavours are clean, slightly nutty and sweet. They are delicious fried up on their own, or added to whatever kind of dish you like, from a stir fry or hot pot to pizzas, pasta, or anywhere you use mushrooms really.
This mushroom can be grown on straw or woodchips in bags or buckets, or on sawdust blocks. Being a native strain of mushroom, it's well adapted to New Zealand conditions and can be grown at any time of the year without additional heating.
