ENOKI GRAIN SPAWN AND DOWELS

Enoki mushrooms (Flammulina velutipes), also known as enokitake, winter needle or velvet foot mushrooms, are a staple addition to many dishes across Asia. They are also present in the wild here in New Zealand.

When grown outdoors or in 'normal' conditions, they are darker in colour, shorter in length and have larger caps than the 'needle form' people may be familiar with seeing in the supermarket. The pale elongated form is achieved by growing them in a high CO2 environment (causing stretching) and almost complete darkness (which keeps them pale / almost white).

Enoki are a fairly easy mushroom to grow. They can be inoculated into wooden logs, or grown on sterilised sawdust / woodchip blocks. They prefer colder temperatures, so its best to grow them in the cooler months from autumn through winter and into spring.
