The potato is a Maori potato that has dark purple skin and flesh. It is a potato that will persist in the ground for longer periods without being cultivated. It needs at least 150 days in the ground. It will start off as a waxy potato but it becomes more floury the longer it is in the ground. A beautiful potato that is not readily available.
