an isolated community located in the mountains within Inga territory.
Honey processed coffee is uncommon throughout Colombia due to its difficulty, but the Inga community have refined their processes over the years.

During the honey process, the coffee pulp is partially removed then sundried for 10-12 days. When dried this way, the coffee cherries take on a very sticky, honey coloured appearance hence the name of the process. Cherries are dried without their protective outer layer which is why the honey process is such a difficult process to execute.

When executed well, coffees tend to exhibit a sweet, well-rounded with a crisp pleasant acidity.
