Exotic and coconut milk panacotta cake

 

This dessert is very refreshing and full of light flavor.

The panacotta is made of coconut and a crispy wafer made of milk chocolate and crispy crepes is parts of the crunchy base of the dessert. On the top a very refreshing pineapple confit and passion fruit gel finish this very elegant patisserie, and finish with a subtle decoration of chocolate butterfly and whipped ganache.

This cake serve 6 peoples and up to 8 peoples.
