Honey & crystallizing

What if there is some crystallization in my chunky honey? Raw honey is a combination of glucose and sucrose, other carbohydrates, minerals, vitamins, enzymes and water. The ultra-saturated combination of these components means there’s more sugar that can be dissolved without heat.

If honey becomes crystallised, it means the honey is 100% real and pure. The crystallisation process is natural and has little effect on honey other than adding new densities, textures, and colours.
