This is made from wheat flour which has been hydrated and processed to remove everything but the gluten. Vital wheat gluten is helpful in improving the rise of dough as well as the chewiness of the end product. Only a small amount is required to make a big difference.

Gluten flour is generally used in bread recipes where you need to boost the gluten content of the flour being used — whole wheat, for instance — or to give them gluten content (e.g. flours such as rye or rice),, so that they can hold yeast gases and rise.


If you don't have any gluten allergies then gluten flour is ideal as a wholemeal bread additive.
