Easy Fruit Tarts

- 1 sheet of frozen puff pastry
- 2 medium cooking apples, or other fruit, peeled, quartered and sliced thinly
- 2 tbsp apricot jam
- icing sugar to dust
Method
Preheat the oven to 200°C. Cut the pastry into thirds then cut each third in half to make 6 even sized rectangles.
Prick the middle of each rectangle two or 3 times. Spread a little apricot jam into the middle of each pastry rectangle and then place 5 or 6 overlapping slices of fruit down the centre of the rectangle on top of the jam.
Bake the pastries until the sides are puffed up and golden and the fruit, cooked if using fresh fruit. Heat remaining jam (a quick few seconds in the microwave will do it).
Brush the fruit with the warmed jam to give it a glossy shine. Dust with icing sugar before serving and serve warm or cold. Tips
