2019 Els Vinyerons Pregadéu

Each of the three Els Vinyerons wines are named for an insect that lives in the vineyard and the Cava is aptly named for the praying mantis. This is a stunning Methode Ancestrale (think Pet Nat but disgorged like Champagne) Cava made from 100% Xarello with lots of acidity and a hint of wildness. It's refreshing and focused and all too drinkable.
