Homegrown Big Chunk - Eucalyptus

Always chunky - never scraps!
More commonly known as Blue Gum, this hardwood has a mild smoke. A common choice for Pizza Ovens, Blue Gum requires a good base to get going, but once alight it has great coaling abilities, emitting the high temperatures needed for cooking while reducing the flames to help avoid charring.
