Also known as green beans, mongo or mash beans, these small, dark green beans are widely grown in India and the Orient. Mung beans are a cherished food in ayurveda and Chinese medicine, where they are considered a ‘yin’ or cooling food. They are sweet, soft, and easily digested.

Mung beans are delicious in stews and popular in Asian desserts, mixed with coconut milk. Sprouted, they are the mainstay of stir-fries and make a wonderful addition to salads.
